Chocolate Chip Cookie Dough No-Bake Protein Bites
Who else is obsessed with cookie dough? I know for me, it’s the best part of making cookies! And don’t even get me started on cookie dough ice cream… OBSESSED.
These protein bites were born from that obsession. I wanted to create the perfect, protein packed bite that would recreate that feeling of eating cookie dough straight from the bowl. Because like I said, that’s the best part of making cookies!
Perfect for an afternoon snack, dessert, breakfast (cookie dough for breakfast? SIGN ME UP!) or really anytime of day, these protein balls are gooey and filled with chocolate chips. To make them even more drool worthy, I covered them in melted dark chocolate. These treats are paleo, refined sugar free, and can be made vegan (remove the collagen). The best part? No need to bake these.

Chocolate Chip Cookie Dough No-Bake Protein Bites
INGREDIENTS:
COOKIE DOUGH:
2 scoops of collagen peptides (I used Vital Proteins)
1 scoop of vanilla plant based protein powder of choice (I used Orgain Organic Vegan Protein & Superfoods Powder in vanilla bean)
1/2 cup of almond butter (I used Wild Friends)
1 tsp. of coconut flour
3 tbsp. of almond milk
1 tsp of vanilla extract
1/2 tsp of cinnamon
2 tbsp. of chocolate chips
Pink Himalayan sea salt
CHOCOLATE COATING:
2 tbsp. of chocolate chips
1 tbsp. of coconut oil
DIRECTIONS:
Combine all of the ingredients for the cookie dough in a bowl until combined.
Use a spoon to scoop bite sized balls and form with your hands.
Refrigerate for a few hours to harden.
Once the bites have hardened, combine the chocolate chips and coconut oil in a bowl and microwave for 30 seconds at a time until melted.
Dip each protein ball in the melted chocolate and place on a parchment paper covered plate, sprinkle with pink Himalayan sea salt and refrigerate again until chocolate hardens.
